Beneficial effects of EPS on human health and gut microbiota.

Recently bacterial exopolysaccharide (EPS) extracted from Lactobacillus spp. and Bifidobacterium spp. has received considerable attention, mainly due to the novel and unique physical characteristics and physiological functions. EPS contributes to biofilm formation and host healthy maintenance, it can be used as an instrument for probiotics to survive in harsh condition. In this review, we provide a fresh perspective and focus on the advancement of bioactivity and immune modulating capability of exopolysaccharide. Indeed, EPS from Lactobacillus spp. and Bifidobacterium spp. exhibit many beneficial bioactivity including anti-tumor activity, antiviral activity, radical scavenging activity and abrogate the cytotoxic effect. Therefore, it has great potential for further development as therapeutic agents or adjuvants for cancer. Furthermore, EPS binds to common surface receptors to elicit the immune response in host, it was able to reduce the secretion of the proinflammatory e.g., IL-6. Thus, the EPS seem to be critical in studying the physiology of Lactobacillus spp. and Bifidobacterium spp. and their interaction with the host.

Professor Dr. Hua Wei, Permanent Member in the State Key Laboratory of Food Science and Technology, China., council members of Mycological Society of China and Microecological Branch of the China Preventive Medicine Association. Researching was focused on microecological additives and their healthy effects on gastrointestinal tract of human being, and development of fast detection methods e.g. fast detection of food-borne diseases for Food safety. Obtained M.Sc. in the major of Fermentation Engineering in Tianjin University of Science & Technology, China (1991), Ph. D of Natural Science in major of Food Microbiology in Universität Hohenheim, Germany in 2005. Visiting scholar in National Agricultural Research Center of Finland (1998-1999) and Post-doctor in Universität Ulm, Germany (2006-2008). Honored as the Professor of Nanchang University since 2003 and the vice director of Sino-German Joint Research Institute (Jiangxi-OAI) since 2005.
Presided over series of national projects e.g. the National High Technology Research and Development Program ("863"Program), Key Projects of National Science and Technology Base Platform, National Natural Science Foundation of China etc. Published more than hundred of papers, won scientific and technological awards for 6 times in China, obtained 8 patents. Invited as Key-Note speaker in Korea-China-Japan “Discover of Bio-drug” in Incheon, Korea in 2011 and the Food Security Forum of Second National Health Forum and Special Drugs Fair in 2010 etc. Acted as the panel member of Alliance of Food Safety Testing Reagents and Equipment Industry Technology Innovation Strategic in China.
